Low-Fat Antipasti Pasta Salad

My grandmother made this and I couldn't believe that it was low-fat pasta salad because it tasted so good... I really like this pasta salad and I will definitely be making this in the near future!

Servings: 8 – 1 cup servings

Ingredients:

2 ½ cups broccoli, cut into small florets
12 ounces cooked pasta, rinsed with cold water
1 cup shredded part-skim mozzarella cheese
½ cup purple onion, diced
2 bell peppers of any colour, chopped (My grandma used red, yellow, and green in hers)
20 medium burgundy olives, sliced
½ package turkey pepperoni, sliced into strips
2/3 cup light Italian salad dressing (I like wishbone salad dressing)

1. In a pan blanch the broccoli for a few minutes then drain and rinse with cold water.
2. In a bowl add all of the ingredients and mix well.
3. It’s ready to serve! Enjoy!

You are quite welcome! Your recipe for Bif Paj was DELICIOUS, I made them last night. And your right, they are better than the ones at the Scandi Fest. The only substitute I made is ground turkey for beef.
